Lark Cake Shop, Silver Lake

At the risk of appearing like a slave to fashion, I must admit that I have sampled some of the cupcake offerings springing up around Los Angeles.

While in Silver Lake, I tried three cakes at Lark, the newest cupcake bakery: Salted Caramel, White Chocolate Lemon, and Chocolate Mousse. Their cakes and cupcakes are well coiffed but not too precious.

While I love all things chocolate and have never been excited by caramel thanks to the overly sweet flavorless caramel chews I grew up on, French salted caramels have given me new appreciation for the sophistication of burnt sugar. Lark’s salted caramel cupcake highlighted all things good about caramel flavor in the salted creamy buttery frosting while the cake itself proved the perfect foundation. The white cake had a light springy, almost angel-food-cake texture. The same white cake was the base for the cupcake filled with lemon curd and topped with white chocolate frosting, yum.

Surprisingly, the chocolate cupcake was my least favorite. Filled with whipped cream and topped with chocolate mousse frosting, the moist chocolate cake didn’t have an intense enough chocolate flavor to hold up to the frosting.

Lark bakery also sells cookies, tarts, full sized cakes, and caramels.
